    <h3 style="color: #decb97">Procedimento</h3>
<p>Pulire i carciofi, tagliarli a spicchi e cuocerli in padella con poco olio, prezzemolo, acqua e regolarli di sale. Macinare il tutto con un frullatore a immersione e successivamente passare a un passatutto, recuperando la crema di carciofi. Far scottare l’astice in una padella poco olio in modo da far rapprendere le proprie carni. Appena freddo sgusciare l’astice mettendo da parte la polpa tagliata a dadini. Pulire la pescatrice, sfilettarla e tagliare la polpa a cubi di un centimetro. Separatamente confezionare un brodo ristretto facendo rosolare il sedano, la carota e la cipolla, tagliati a pezzetti, successivamente unire gli scarti della pescatrice e il guscio dell’astice, far rosolare ancora, sfumare con vino bianco ed unire pochissima acqua. Far cuocere per circa 20 minuti in modo da ottenere un brodo saporito e molto ristretto. In una padella capiente far soffriggere lo spicchio d’aglio schiacciato, unire i cubi di pescatrice salati e leggermente infarinati e continuare la rosolatura aggiungere la polpa dell’astice e spostare dalla fiamma. Cuocere le tagliatelle in abbondante acqua salata, scolarle al dente e mantecarle con la salsa a fiamma vivace, unendo di tanto in tanto il brodo precedentemente preparato. Sistemare alla base del piatto la crema di carciofi tiepida e adagiare sopra le tagliatelle ben calde.</p>

    <h3 style="color: #decb97;">Procedimento</h3>
<p>Far rosolare in una casseruola il sedano le carote e la cipolla tagliata a piccoli dadi insieme all’olio, aggiungere l’astice, scottare finché non diventa rosso vivo, sfumare con il vino e togliere dal fuoco. Con l’aiuto di un forbice aprire l’astice e recuperare la polpa, anche quella delle chele, la carcassa unirla al fondo di sedano carote e cipolla, aggiungere il concentrato di pomodoro e il brodo, cuocere per 10 minuti filtrare e legare con farina o amido, il composto deve risultare fluido. Tagliare le zucchine e le carote a julienne saltare in padella. Soffriggere i pomodorini tagliati per 2 minuti, aggiungere la polpa dell’astice unire la salsa, cuocere la pasta e saltare, decorando con le zucchine e le carote.</p>

<p>Pulire tutto il pesce, tagliare le seppie e i calamari a pezzi grossolani, i scampi divisi per metà in lunghezza, la coda di rospo a cubetti, e i gamberi lasciarli interi. Schiacciare 2 spicchi d’aglio con tutta la buccia e farli soffriggere con l’olio in un padella, togliere l’aglio e versare il prezzemolo, i scampi e i gamberi (saranno la base principale del gusto) continuare a versare i calamari, le seppie, la coda di rospo, infine le cozze e i pomodorini, una breve cottura. Cuocere la pasta e condire, il tutto deve risultare con una buona fluidità, aiutandosi anche con un po’ d’acqua di cottura.</p>

<p>Tagliare la mozzarella e il caciocavallo a dadini e mettere in frigo. Snervare la carne e spezzettarla con un coltello pesante, mettendo da parte le ossa dell’osso buco. Condire la carne con sale, farina e poco pepe bianco e farla rosolare, insieme alle ossa, in una padella a fiamma vivace e con pochissimo olio. Separatamente far rosolare, con la restante parte dell’olio, il trito di sedano, carote e cipolla, unire la carne rosolata e sfumare con il vino bianco. Aggiungere lo zafferano, il latte e un mestolo d’acqua se necessario e far cuocere lentamente per circa mezz’ora e regolare di sale. Confezionare la lasagna secondo il metodo classico, alternando le sfoglie con la salsa, la mozzarella, il caciocavallo e il parmigiano. Far cuocere in forno per circa 35 minuti circa a 180 °C. Far riposare prima di servire.</p>

<p>In una padella versare olio, peperone rosso, punte di asparagi tagliati a fiammifero. Regolare di sale e pepe. Stufare per un po&#8217; e cuocere la pasta in abbondante acqua salata. Saltare nella padella preparata precedentamente, amalgamare con formaggio e prezzemolo. Servire con una grattata di tartufo fresco da voi scelto.</p>

<p>Dividere la polpa sgusciata degli scampi e dei gamberoni dalle teste. In una casseruola soffriggere il sedano, le carote e la cipolla tagliate a piccoli cubetti, aggiungere le teste degli scampi e dei gamberoni pestare il tutto e stufare qualche minuto, sfumare con il vino e aggiungere il concentrato di pomodoro, versare il brodo coprendo di due dita la massa, cuocere per 10 minuti e filtrare il tutto in un colino, rimettere sul fuoco, emulsionare il burro unitamente alla farina e legare la salsa che deve risultare fluida, a questo punto aggiustare di sale. In una padella antiaderente spadellare prima le zucchine tagliate a cubetti e poi la polpa degli scampi e dei gamberoni sfumati con il brandy. Cuocere i quadrucci e assemblare il tutto, con una consistenza leggermente brodosa, servire con il prezzemolo tritato e un filo d’olio.</p>

<p>Preparare la frolla con uova, zucchero, farina “00”, olio extra vergine di oliva, lievito. Buccia di limone grattugiata finemente. Impastare velocemente tutti gli ingredienti e far riposare l’impasto mezz’ora coperto con un tovagliolo. Foderare una teglia imburrata con la frolla, stendere uno strato generoso di confettura di ciliegie; decorare con striscioline di frolla. Forno 200° per 20 minuti.</p>

<p>Lavare i peperoni e tagliarli a pezzi. In una casseruola far imbiondire uno spicchio d’aglio in poco olio, unire i peperoni sgocciolati, un po’ d’acqua e un presa di sale. Lasciar cuocere ed a cottura ultimata aggiungere un po’ d’olio e frullare il tutto. Pulire, lavare e diliscare le alici. Tostare i pinoli in un padellino con un po’ d’olio. In una padella far imbiondire un spicchio d’aglio con un po’ d’olio, unire le alici un pizzico di sale e far cuocere per un po’ di tempo a fiamma vivace sfumare con il vino. Cuocere la pasta e mantecare con i pinoli e il prezzemolo. Servire la pasta nei piatti su crema di peperoni.</p>

<p>Cuocere la Chitarra in abbondante acqua salata. In una padella scaldare due cucchiai di olio extravergine di oliva al Tartufo con la salsa tartufata e un mestolino di acqua di cottura della pasta. Scolare al dente la chitarra in una zuppiera, versare la salsa, amalgamare, trasferire nel piatto di portata e cospargere con scaglie di Tartufo estivo e olio extravergine di oliva al tartufo.</p>
